Just found an easy way to replicate the olive tapenade spread from a favorite Italian restaurant. One of my criteria for a good Italian restaurant, besides how good the food tastes, is the pre-meal bread and condiment offering. The bread better be fresh and the condiments should include olive oil and balsamic or wine vinegar. Olive spread is a bonus. Butter should not be on the table.
Recipe for Olive Spread
- 2 cloves garlic
- 1 cup pitted Kalamata olives
- 1 Tablespoon wine Vinegar
- 2 Tablespoons extra virgin olive oil
Chop garlic cloves in small bowl of a food processor. Add the olives, vinegar, and olive oil and process until spreadable but not completely smooth.
Smother on Italian or French bread slices.
