What could be more comforting – a warm piece of banana bread, covered with a slab of melting butter. Ellie Krieger would probably advise you to skip the butter topping, but her recipe from Comfort Food Fix will still satisfy.
Banana-Pecan Bread
Ingredients: non-stick cooking spray, 1/2 cup pecans, 3/4 cup all-purpose flour, 1 cup whole-wheat pastry flour, 1/4 cup granulated sugar, 1/4 cup brown sugar, 1 teaspoon baking soda, 1/2 teaspoon baking powder, 1/4 teaspoon salt, 1/4 cup canola oil, 1/4 cup nonfat yogurt, 2 large eggs. 1 teaspoon vanilla extract, 3 very ripe, large bananas, peeled and mashed (about 1 1/2 cups).
Spread pecans on a baking sheet and toast in the oven – about 8 minutes – set aside.
Whisk together dry ingredients (flours, sugar, baking soda, baking powder, salt). Whisk together wet ingredients (yogurt, oil, eggs, and vanilla. Add bananas. Stir wet ingredients into dry ingredients, and stir in toasted pecans.
Pour the batter into loaf pan sprayed with non-stick cooking oil, and bake in 350 oven about 50 -55 minutes. Cool on wire rack before slicing.
